Flakers are used to solidify a liquid product. The liquid is applied to an internally cooled drum or belt, solidifying the product. The layer of solid product is then scraped off the cooling surface with a knife. Belt flakers use a belt and are as long as needed for the product to solidify. Drum flakers are used with products that solidify quickly and do not need as much time to cool. Belt flakers and drum flakers typically use smooth, stainless steel cooling surfaces.
